You can't have open source in schools without a lot of help, and you'll need the help of tech-savvy students to do it affordably.
While "early adopter" teachers and "whiz kids" can get pilot OS projects going, that is not sustainable the kids graduate, the teachers move on.
Open source is about learning from what others have done. That goes for the instructional approach and administrative practices that make OS implementations work in school settings.
